Apple cinnamon baked oatmeal

My apple cinnamon baked oatmeal is super easy to make, feeds a crowd, and can be made in advance. I prefer to make it the day before, refrigerate and then reheat it in the morning😋, but it’s delicious right out of the oven too. Plus it’s loaded with apple and cinnamon goodness, what more could ya want?!

Ingredients for Apple Cinnamon Baked Oatmeal

  • Old-fashioned oats: Nothing against quick oats, but old-fashioned rolled oats work best for this recipe (in my opinion)
  • Brown sugar: Use light brown sugar, tightly packed when measuring. You can substitute cane sugar, date sugar, maple syrup, or other sweeteners you are familiar with.
  • Ground cinnamon: 1½ tsp is just enough to taste it, but it is not so overpowering.
  • Baking powder: because we want to keep it light and fluffy
  • Salt: brings out the flavors
  • Large eggs whisked: This is what binds everything together.
  • Vanilla extract: My favorite vanilla is Mexican vanilla 😄
  • Melted butter: This adds moisture to the oats. If you can’t use butter, my favorite substitutions are grapeseed oil or avocado oil.
  • Milk: I use almond milk in this recipe, but any milk will also work.
  • Apples: (peeled, cored, and grated) I used Honeycrisp apples, but any baking apple will do just fine.
  • Chopped pecans: (optional) If your diet allows it, I highly recommend using pecans or your favorite nut for a delicious texture contrast.

    How to Serve Baked Oatmeal

    This baked oatmeal is delicious as is, but it is also amazing with a drizzle of syrup and milk. Get creative and add your favorite toppings. Here’s a list of some ideas:

    • Fresh blueberries
    • Fresh raspberries
    • Fresh strawberries
    • Fresh apple slices
    • Raisins
    • Dried cranberries
    • Chia seeds
    • Thinned-out peanut butter drizzle(mix PB with a little milk)
    • Honey
    • A dollop of vanilla greek yogurt

    How to Make Apple Cinnamon Baked Oatmeal

    Preheat oven to 350º. Grease a casserole pan with butter or nonstick spray. Set aside.

    Peel, core, and grate 3 apples into a mixing bowl. Set aside.

    In a large mixing bowl, add the oats, brown sugar, cinnamon, baking powder, and salt. mix together.

    Add milk, whisked eggs, grated apple, and melted butter. Please make sure the butter has cooled completely before adding it in.

    Mix together well, then pour the mixture into the baking dish. Top with pecans(optional). Bake in the preheated oven for 30-35minutes. Start checking it at 28 minutes. Bake less for soft-set oats, and more for stiff cake-like oats( pictured bellow)

    Once it has finished baking, pull it out of the oven and allow it to cool for a few minutes before serving.

    Serve as is, or with a drizzle of milk, maple syrup, more brown sugar, or other toppings of choice. Enjoy!

    Tips and FAQ

    Can I freeze baked oatmeal?

    Yes! Just transfer it to a freezer-friendly container, or cut it into individual slices and wrap each piece in plastic wrap. Then place into a freezer bag and freeze for up to 3 months. Thaw in the refrigerator overnight and reheat in the microwave until hot, or cover with foil and heat in a 325º oven for 20 minutes or until heated through.

    Can I use quick oats instead?

    Yes, you may certainly use quick oats. You will have to adjust the cooking time. Start checking it at 25 minutes and go from there.

    Can I make the mixture and then bake it in the morning?

    No, please don’t do this. The oats will soak up all the liquid overnight. Bake immediately after mixing all the ingredients.
