Buttermilk Waffles

A favorite breakfast item in our house is waffles! My three boys can’t turn down waffles, especially when they are packed with chocolate chips! My buttermilk waffles recipe was created for the mini waffle makers, but you can use any waffle maker you like.😊

Ingredients

This recipe is simply fabulous because it requires very common ingredients. The only ingredient that may not be in your home is buttermilk, but keep reading to see the simple solution to this.

all-purpose flour: Use bleached all-purpose flour, unbleached flour has a texture that is a little more coarse.

sugar: I use organic cane sugar but you can use whatever you are familiar with. Date sugar and stevia tend to have a sweeter taste, so I would reduce these to ½ Tbsp.

baking powder: Make sure it is active and in good condition. Inactive or expired baking powder will not give you fluffy waffles.

baking soda: Also make sure this is in good condition.

salt: The best salt to use in baking is table salt because of the small crystal, which dissolves better and gives a consistent flavor throughout.

buttermilk: To substitute buttermilk, simply add 1 Tbsp of vinegar or lemon juice to 1 cup of regular milk and let it sit for 5 minutes.

butter: Please make sure that the butter is melted and cooled before using. If your butter is hot, it might scramble the egg.

large egg: It’s hard to substitute the egg in this recipe because the egg not only provides moisture but also flavor. I do not recommend it.

vanilla extract: If you didn’t know, Mexican vanilla is my favorite. 10 out of 10 recommend😉.

How to Make Buttermilk Waffles

  • Add flour, sugar, baking soda, baking powder, and salt to a small mixing bowl and whisk together. Set aside.
  • Crack the egg into a medium mixing bowl and whisk, then add the buttermilk, butter, and vanilla extract. Whisk together to combine.
  • Add the dry ingredients to the wet ingredients and mix to combine. Be careful not to overmix, the batter will be a little lumpy. Set aside to rest for 10 minutes.
  • In the meantime prep the waffle iron. We want it to be very hot. Follow your waffle maker’s instructions on how to grease it.
  • Add a scoop(about ¼ cup) of batter to the waffle maker and cook until done.* Serve immediately or transfer the waffle to a cooling rack over a cookie sheet. Keep the waffles in a warm oven until ready to serve.
  • Repeat the previous step until all the waffle batter is gone.
  • Add your favorite toppings and enjoy!

Variations and Toppings

Did I mention how versatile this simple batter is? It is so easy to customize it to your liking. Add-ins include:

  • Chocolate chips
  • White chocolate chips
  • Dried fruits
  • Nuts such as pecans
  • Cinnamon, nutmeg, brown sugar
  • Fresh blueberries
  • Dried fruit
  • Funfetti sprinkles

Or keep the batter plain and add toppings! Get creative and make all sorts of flavors. This is especially fun for kids. Some of my favorites include

  • Banana slices
  • Fresh berries
  • Berry compote
  • Coconut milk whipped cream
  • Syrup and almonds, or pecans
  • Caramel or chocolate syrup

FAQ and Tips For Making Buttermilk Waffles

Can I make waffle batter ahead of time?

You can make the batter up to 1 hour ahead of time. Cover and keep in the refrigerator, then when ready to use, give it a gentle stir. The longer it sits the less active the baking powder will be. The bubbles will die down and this could result in flat rubbery waffles.

Why are my waffles soggy and not crispy?

Buttermilk creates a soft waffle, but if you want to make them as crispy as possible follow these tips:
1. Know your waffle iron! It is important in achieving crispy waffles. Make sure it is very hot for EVERY waffle.
2. If you stack the waffles on a plate while making them, they will create steam, and that steam will moisten the waffles and make them soggy. To keep their crispy exterior you can place them onto a cooling rack over a cookie sheet and keep them in a warm oven( heat oven to 200º, then turn off).

Can I use any waffle iron?

I developed this recipe for the mini waffle makers and it yields 8 waffles. You may use any waffle iron you like, just please be aware that the number of waffles you get will change.

Notes

Buttermilk* To make your own buttermilk, add 1 tbsp of vinegar to 1 cup of regular milk and allow it to sit for 5 minutes before using. Please be aware that this substitute will make the batter thinner. Do not add more flour.
Waffle Iron* How you use your waffle iron will vary depending on the brand and model. It is important to know your waffle iron. Mine will turn the light on when it is done cooking so I have to stand by to see it, I also know to give it a few extra seconds for browning. 
Storing* Waffles store beautifully. Place them in a plastic seal bag, plastic wrap, or storage container. They will last about 4 days in the refrigerator. To freeze them, wrap each waffle in plastic wrap and then place them into a plastic seal bag. Freeze for up to 3 months.
Reheating* To reheat the waffles I recommend using the toaster because it gives you a crispy exterior and soft interior. The microwave will make them soggy.
