Easy Baked Chicken Flautas

Flautas have always been a family favorite! I started baking them after my kids lost their baby teeth and complained they couldn’t eat them because they were too crunchy. These baked chicken flautas still have a slight crunch like the traditional fried version, but they are soft enough for little ones to eat. Delicious and a mom win!!

What Does Flauta Mean?

Flauta literally means flute in Spanish, and the name is fitting, considering these rolled tacos do resemble a flute shape. The Mexican flauta A.K.A Tacos Dorados, Rolled Tacos, or Taquitos, consists of a corn or flour tortilla and typically a meat filling. It is rolled up and then pan-fried.

How To Make Baked Chicken Flautas

Prep

Place chicken breast, onion, and garlic in a pot and add enough water to cover the chicken. Bring it to a simmer on medium-high heat, then reduce to medium and simmer until cooked through ( 15-20 minutes ).

In the meantime, place a skillet over medium-high heat. Once hot, add about 1 tsp of oil and swirl it around to coat the bottom. Add a tortilla and cook for about 30 seconds, then flip over and cook for just another few seconds. Transfer to a baking sheet. Repeat with the remaining tortillas.

Once the chicken is done, remove it from the broth and place it on a plate or in a bowl. Use two forks to shred. Add salt and stir well to combine.

Preheat oven to 400º

Assemble

Take one tortilla and lay it flat on the baking sheet with the oiled side down. Spread some chicken on one side of the tortilla. Roll the tortilla over the chicken as tightly as possible.

Arrange the rolled flauta on the baking sheet with the flap down ( You could use a toothpick to secure it if you wish ). Repeat with remaining tortillas and chicken.

Bake and Serve

Place the flautas in the preheated oven and bake for 10-15 minutes or until golden brown.

Arrange flautas on a plate, drizzle sour cream on them, then top with cheese, lettuce, and tomato ( optional ).

Tips

  • To ensure even distribution of the chicken, lay all the tortillas out on the baking sheet and distribute the chicken evenly before rolling them up.
  • Do not place the filling directly in the middle, but instead closer to the side you will roll up first. This makes rolling the flautas so much easier and gives them a better shape.
  • To reheat flautas, place them on a baking tray and into a 375º oven for 5-7 minutes. Alternatively, you could heat them up on a griddle or skillet, flipping on all sides until heated through.

How To Serve Flautas

There are many ways to enjoy flautas. They are commonly topped with Mexican créma, cheese, lettuce, and tomato. Some other great toppings include pickled jalapeños, sliced radish, chopped onion, and pico de gallo.

Instead of toppings you could try dips such as guacamole, salsa, sour cream, or a queso dip.

Ingredients
  

  • lbs chicken breast
  • ½ small onion

  • 16 corn tortillas

  • sour cream
  • 1 tomato diced
  • ¼ lettuce shredded
  • 1 cup Mexican cheese or Colby Jack grated or crumbled
